Amaranth is suitable for almost everyone: those who want to keep their shape in perfect shape, vegetarians, vegans, and even those who, for health reasons, cannot eat foods containing gluten.
Amaranth flour tortillas
- amaranth flour – 200 grams;
- potatoes – 100 grams;
- chili pepper – 40 grams;
- Cumin – 5 grams;
- coriander, cilantro – 5 grams;
- salt – to taste;
- butter – 50 grams.
Start with mashed potatoes. Cook just on the water, but try to turn it into the most homogeneous mass without lumps.
Send the amaranth flour to a bowl, add the slightly cooled mashed potatoes to it. Throw in crushed chili pepper, cumin, finely chopped cilantro and salt. Now mix everything well and add a small amount of water, knead a rather elastic dough.
Melt the butter in a water bath. Grease them with the dough, put it on the bottom of the bowl, cover with foil and leave it alone for about 10 minutes.
After this time, form small balls of about 3 centimeters in size from the mass. These balls now need to roll a rolling pin to the cake.
Heat a dry pan well and fry the cakes on one side for about 2-3 minutes, then lightly grease with butter. Now turn over, fry the same amount again and lubricate again.
Serve this dish must be hot. It can be a great addition to almost any soup.

Amaranth Crunchy Cookies
- amaranth – 25 grams;
- oatmeal – 100 grams;
- coconut flakes – 45 grams;
- almond flakes – 50 grams;
- flour – 75 grams;
- sugar – 80 grams;
- butter – 100 grams;
- honey – 115 grams;
- soda or baking powder – ¾ tsp.
Boil amaranth. Most likely, if you are not the first time on our site, you know how to do it. Try to cook shchiritsu so that it turned out very crumbly.
In a bowl, mix the chilled amaranth with oatmeal, almonds, coconut, sugar and flour. In a separate saucepan, mix a tablespoon of water, honey and butter, which you previously melt in a water bath. Fill the mixture with dry ingredients.
Now it remains to mix everything well to get a homogeneous mass. Take a small amount of dough with a spoon or with your hands, make round biscuits from it and spread it on a baking tray pre-covered with parchment at a distance of 3 centimeters from each other.
Preheat the oven to 180 degrees and bake cookies in it for only 10-15 minutes or until it gets golden color.
Like the recipe, but no amaranth? Unfortunately, it is not possible to replace anything in this recipe. But with her search there should be no problems, because this product is now available for sale.
Simple amaranth salad
- amaranth seeds – 100 grams;
- salad greens – 1 bunch;
- spinach – 75 grams;
- cucumber – 1 piece;
- Bulgarian pepper – 2 pieces;
- cherry tomatoes – 100 grams;
- olive oil – 6 tablespoons;
- lemon juice – 3 tablespoons.
Amaranth seeds, cover with cold water, bring to a boil and, reducing the heat, cook for about 15 minutes. The syrup contains a fairly large amount of gluten, so before you start cooking, rinse it several times in running water.
When the porridge is cooked, drain off the excess liquid. By the way, to make the seeds as dry as possible, spread them in a thin layer on baking paper and let them dry.
It remains to cut all the above vegetables, mix well with amaranth, season with olive oil and lemon juice and the dish is ready! And what a dish! Simple, tasty, unusual and very healthy!
Amaranth risotto with porcini mushrooms
- amaranth – 300 grams;
- fresh white mushrooms – 300 grams;
- or dried mushrooms – 50 grams;
- water – 1 liter;
- vegetable oil – 2 tablespoons;
- onion – 1 piece;
- salt and pepper to taste;
- soy sauce – 50 grams;
- dry white wine –100 grams;
- dill and parsley.
Put the mushrooms in a saucepan, cover with cold water and boil. If you have fresh mushrooms, it will take 30 minutes, if dried – 1.5 hours. When they are cooked, pour the broth into a separate pan. Now chop the mushrooms and onions rather finely and fry in vegetable oil until a characteristic smell appears.
Rinse amaranth several times in running water and pour it into the frying pan with onions. Roast for 2 minutes. Mix everything well and send it to the pan, where you have previously poured the mushroom broth. Add white wine, spices and soy sauce.
Boil the risotto until the amaranth softens completely. If you notice that there is not enough broth, add plain water to the pan.
Serve the dish best with greens.
Amaranth and Potato Pizza
- amaranth flour – 200 grams;
- rice flour – 100 grams;
- various dried spices – 1 tablespoon;
- dried chilli – 1 tsp;
- salt – 2 teaspoons;
- yeast – 1 tablespoon;
- water – 50 grams;
- sugar – 1 tsp;
- potatoes – 2 pieces;
- olive oil – 1 tsp;
- Paprika – 1.5 tsp;
- cumin – 1 tsp;
- rosemary – 1 tsp;
- cheese – 200 grams.
In a large bowl, mix the amaranth, rice flour, and yeast. Now add chili peppers, dried spices, salt and mix everything well. In the middle of the resulting mixture, make a well and gradually begin to pour water into it. Knead the elastic dough. If you see that there is not enough water, add it. But do not immediately overdo it: pour literally 1 tablespoon at a time.
Cover the dough with a towel and send to a warm place so that it rises a little. At this time we will prepare the pizza filling.
Peel, wash and dry the potatoes. Cut it into thin plates. Cover the baking sheet with parchment, lightly sprinkle it with olive oil and place the chopped potatoes on it. Sprinkle with salt and pepper a little. Send the potatoes to bake in the oven at 180 degrees for 5-8 minutes.
Sprinkle amaranth flour over the workplace, remove the dough and knead it for about 5 minutes. If the mass does not cease to stick to the hands, add a little more flour. The result should be such a dough that will be hard to knead hands.
Place the dough in a baking dish, level the surface. Bake the pizza base for about 10-12 minutes or until the edges turn brown. Remove the form. Liberately sprinkle it with cheese, pre-grated on a coarse grater, put the baked potatoes. Sprinkle with spices and chili.
Once again, send the pizza to the oven 180 degrees until the cheese is completely melted. We take out and send to the table, because the pizza is ready! It is best to serve it along with some useful salad.
Dietary amaranth sauce
- amaranth flour – 3 tablespoons;
- hot water – 1 tablespoon;
- salt – to taste.
Warm the flour lightly in a dry frying pan, then add a little salt and a thin stream of water. Now it is necessary, constantly stirring, bring the mixture to a boil. Everything! Diet sauce is ready. It can be used for meat, mushrooms, fish and everything your soul desires.
