It is just that the ancient Indians considered schiritsu to be such a valuable product that they were ready to give their lives for it.

Maya, Aztecs and Incas called amaranth exclusively “gift of the gods”, he was honored and worshiped. When the Christianization and colonization of the indigenous peoples of North America began, the destruction of local cultures occurred. Fortunately, it was not possible to remove everything, so today we can enjoy such an amazing plant as shchiritsa: its taste, unusual and usefulness.

Amaranth porridge with cheese


  • amaranth grains – 3 tablespoons;
  • oatmeal – 3 tablespoons;
  • oat bran – 1 tablespoon;
  • flaxseed – 1 tsp;
  • butter – 0.5 tsp;
  • cheese – 2-3 tablespoons;
  • linseed oil – 0.5 tsp;
  • any nuts are optional;
  • spices – to taste.


Pour amaranth seeds with cold water, put on the fire, bring to a boil and boil for about 20-25 minutes. Salt a little water beforehand. If you want to eat unusual porridge for breakfast, you can boil amaranth the night before – the taste of the dish will not affect it in any way.

A few minutes before the end of cooking amaranth, add oatmeal and oat bran to it. While the porridge is still hot, season it with butter and linseed oil. Does the dish seem too thick to you? No problem! Pour a small amount of milk into it.

  • amaranth seeds – 70 grams;
  • vegetable oil – 100 ml;
  • wheat flour – 400 grams;

  • fresh or frozen strawberries – 100 grams;

In a large bowl, mix flour, baking powder, vanilla, strawberries, and selected nuts. Try to make so that a more or less homogeneous mass. Separately mix the egg, amaranth, honey, yogurt and butter. Just move carefully. Combine both bowls and mix well again to avoid lumps.

Turn on the oven to warm up. Grease cake pans with vegetable oil or sprinkle with flour. Place the dough into the molds to about half their height. You need to bake such unusual cupcakes at a temperature of 200 degrees until they are browned.

Amaranth Bars


  • amaranth seeds – 100 grams;
  • Almonds – 100 grams;
  • pecan nuts – 100 grams;
  • cinnamon – 1 tsp;
  • vanilla – 1 tsp;
  • butter – 100 grams;
  • agave syrup – 240 grams.


In a blender or coffee grinder, chop the nuts. But do not make flour from them – let it be not very fine. Place nuts, vanilla, cinnamon and amaranth in a deep bowl. Mix thoroughly.

Melt butter in a water bath and add agave syrup to it. Stir the mass so that it becomes homogeneous. Combine the nut-amaranth mixture with freshly prepared and mix everything well.

Take a deep baking sheet and cover it with parchment paper. Put on it the resulting mass, evenly distributed over the entire surface.

Now you need to put another sheet of parchment paper on top and, using a cutting board, tamp the dough. Next, send the pan to the fridge for 2 hours. After this time, the mass can be cut into bars and eaten.

Very simple and very tasty recipe! It is ideal for those who are looking for a healthy and low-calorie snack. After all, in principle, in this dish there is nothing that will add kilograms: amaranth is low-calorie, nuts too. Yes, there is even no sugar!

By the way, about him. Sometimes it’s hard to find agave syrup. If it does not work, do not despair – replace it with sugar.

Amaranth porridge

  • amaranth seeds – 200 grams;
  • garlic – 2 cloves;
  • onion – 1 piece;
  • water or vegetable broth – 600 ml;
  • sea ​​salt or soy sauce – to taste;
  • any hot sauce to taste;
  • tomatoes – 2 pieces.


Peel and chop the garlic. It is better to do this not with the help of a garlic press, but simply by cutting it with a knife into small pieces. Cooks point out that this way he preserves his taste and aroma better. Finely chop the onion.

Take a large saucepan and mix the amaranth, onion, garlic and broth (water) in it. Bring to a boil and let simmer for 20-25 minutes on very low heat. It is important to wait until the amaranth absorbs most of the liquid. Mix the porridge well.

If the mass came out quite liquid, or the seeds did not become soft (they should be crisp, but not hard), boil everything again, stirring continuously, for about 30 seconds.

Add salt or soy sauce to taste.

This unusual dish is best served with a small amount of hot sauce and chopped tomatoes.

Tasty, useful and unbanal!

Amaranth porridge with prunes and nuts


  • amaranth seeds – 400 grams;
  • prunes – 400 grams;
  • walnuts – 2-3 tablespoons;
  • butter – 1 tablespoon;
  • sugar and salt – to taste.


Crush walnuts in a blender or mortar. Rinse prunes thoroughly, remove the stones and finely chop the flesh. Now put it in a saucepan, cover it with cold water and put on a slow fire for about 5-7 minutes.

After this time, pour in previously well-washed amaranth seeds. Add sugar and salt to the pan. Approximately 5 minutes before the end of cooking, add nuts to amaranth. Cook porridge until cooked.

Before serving, season with butter, stir and serve.

This dish is ideal as a substitute for the usual, and maybe slightly annoying, oatmeal. Its nutty taste and aroma will not leave indifferent either a child or an adult!

Raw Amaranth Porridge
