Amaranth Muffins


  • hot water – 150 grams;
  • vegetable oil – 50 grams;
  • honey – 50 grams;
  • any nuts – 50 grams;
  • amaranth flour – 350 grams;
  • soda – 2 tsp;
  • ground cinnamon – 1 tsp;
  • raisins – 100 grams;
  • vanillin – 1 tsp;
  • salt to taste


Combine in a bowl oil, water and honey. Stir the mass thoroughly and set aside until the honey is completely melted. When this happens, add vanillin to the mixture.

In a separate container, combine the remaining ingredients. Mix them well. Next, you need to combine the two bowls and mix everything again so that not a single lump remains.

It remains to collect them: take one circle, lay out the filling on it (nuts, poppy seeds), cover with the second layer on top and fasten the edges.

Bake buns need only 30 minutes at a temperature of 190 ° C.

Flan with amaranth


  • concentrated milk – 500 ml;
  • egg – 6 pieces;
  • condensed milk – 1 can;
  • ground cardamom – 1 tsp;
  • vanilla essence – 2 tsp;
  • butter – 1 tablespoon;
  • sugar – 100 grams;
  • amaranth seeds – 100 grams;

To decorate:

  • strawberries – 6 pieces;
  • mango – 2 pieces;
  • peach – 1 piece;
  • chocolate – 1 tile.


Cut the mango and peach into cubes. Melt a bar of chocolate in a water bath.

Pound all the eggs into the bowl, add milk, vanilla and ground cardamom. Stir everything until a homogeneous mixture. The best result is obtained by doing this with a mixer. Strain the mass to discard unwanted, even the smallest pieces of cardamom.

Let’s start cooking caramel: heat the pan, throw butter on it, add sugar and stir until it is lightly caramelized. Next, remove the pan from the heat and pour the mass onto the bottom of the mold in which the flan will be prepared. Cool a little and place the previously prepared mixture for the flan on top. Warm up the dessert in the oven for about 10-15 minutes, and then send for an hour in the fridge.

Before serving, be sure to decorate the flan with amaranth seeds and fruit. Believe, you will forget this dish very soon, just like your guests, by the way!

Amaranth and Yoghurt Cake


  • amaranth flour – 300 grams;
  • butter – 135 grams;
  • yogurt – 500 ml;
  • peaches in syrup – 100 grams;
  • sugar – 100 grams;
  • fruit gelatin – 21 grams;
  • water – 60 ml.


Remove the peaches from the jar and try to cut half of them into as small as possible. Melt the butter in a water bath. Gelatin dissolve in water. The preparatory stage is over and proceed to the immediate preparation of the cake.

Mix flour and butter until smooth. Next, put it on the bottom of the form, which must first be covered with foil or parchment. Put in the fridge for 10 minutes.

In a separate bowl, beat the yogurt, peaches, sugar and gelatin, which we had previously diluted with water. Put the mixture on the basis of amaranth, add the remaining peaches and refrigerate for 1 hour.

After 60 minutes, your cold cake will be fully prepared. Enjoy your meal!

Amaranth Chocolate Cake


  • dark chocolate – 230 grams;
  • butter – 230 grams;
  • sugar – 200 grams;
  • amaranth flour – 200 grams;
  • eggs – 6 pieces;
  • vanillin – 1.5 tsp;
  • salt – 1 tsp.


Throw butter and chocolate in a small saucepan, melt them in a water bath, stirring constantly. It is necessary to obtain a homogeneous mass. Leave it to cool slightly.

In a separate bowl, mix the egg and sugar with a mixer. This should be done at high speed for 3 minutes or as long as the mixture does not increase 2 times and becomes foamy. When this happens, add salt and vanilla.

Combine both bowls and add the pre-sifted amaranth flour there, stir until smooth. The resulting dough must be poured into a greased, oiled form and sent to the oven for 45 minutes. While the cake is being prepared, it will be necessary to shake the mold several times.

Before serving the dessert on the table, be sure to let it cool completely. Sprinkle with grated chocolate, cocoa, butter cream and other things that you like.
