For example, a good option is to fry the seeds a little bit and add them to any vegetable salads. The same salads can be filled with amaranth oil, which will give the salad a nice savory flavor. An important ingredient in salads will be the green leaves of amaranth.

But the flour is suitable for cooking:

Amaranth porridge
A great option for a full lunch or dinner (as well as a light dinner) is amaranth porridge. For its preparation will need the following ingredients:

  • 1 tbsp. amaranth seeds;
  • a small spoon of cinnamon;
  • salt to taste

The sequence of actions for cooking porridge is as follows:

  • add amaranth grains to the pan;
  • fill the grains with water (in proportions – two parts of water for one part of the grains);
  • boil;
  • reduce the heat and boil for another twenty minutes;
  • as soon as amaranth seeds completely absorb water, turn off the gas;
    then immediately add cinnamon, salt and mix thoroughly.

Note. Amaranth can be stirred only after it has completely absorbed water! Not earlier!

Amaranth and lentil cutlets
For burgers need the following ingredients:

  • half a glass of amaranth grains;
  • half a cup of coriander (meaning fresh, but finely chopped);
  • one medium bulb, pre-cut into small cubes;
  • one small cooked whole potato;
  • half a cup of breadcrumbs for breading;
  • pepper, salt – to taste.

Do not be confused by the number of ingredients. In fact, there is nothing difficult in cooking such meatballs. The sequence of actions is as follows:

  • mix lentils and amaranth in one container;
  • cover with water and boil for about fifteen minutes;
  • drain the remaining water;
  • transfer all ingredients to a larger container and mix thoroughly;
  • if the mixture turns out to be liquid, add crackers until a consistency suitable for forming patties is obtained;
  • form burgers;
  • grease the pan with butter;
  • bake cutlets in the oven at a temperature of 150 degrees for about 15 minutes.

To fully experience the taste of amaranth cutlets, serve them with coriander!

Amaranth pancakes
They will need the following ingredients:

  • a glass of amaranth flour;
  • a quarter cup lightly roasted almonds;
  • half a small spoonful of ground cinnamon;
  • one small spoon of soda;
  • a quarter cup of honey (if you only have candied honey, melt it in a water bath, but make sure that it does not boil, otherwise all the useful properties will be neutralized by high temperature);
  • two large spoons of fresh lemon juice.

The sequence of actions when cooking diet amaranth pancakes is as follows:

  • mix cinnamon, soda, almonds and amaranth flour in the same bowl;
  • in another vessel, mix lemon juice, honey, some amaranth oil and some pure water;
  • then combine the contents of both vessels and knead again;
  • on medium heat, heat an oiled pan or crepe maker;
  • ladle pour the dough into the pan and fry like regular pancakes.

Rules for the use of amaranth
No matter how useful amaranth is, it is important to adhere to the rules of its use. Only in this case, it will be of maximum benefit. So – the ideal consumption rate is one glass per day, but it is recommended to divide it into three meals: for breakfast, lunch and dinner.

Note. Amaranth has no side effects and practically no contraindications. It can not be used only for those who have problems with the pancreas, cholelithiasis or idiosyncrasy of the product.
