Amaranth is ideal for use in baking. Especially in the one that should not contain gluten. Through the use of amaranth in the preparation of bakery products, it is possible to significantly increase their nutritional value.

We learn how each of us can use amaranth in baking:

Use amaranth flour as a substitute for wheat or common flour. Replacing about 30% of the flour on amaranth, you will not notice much difference in the taste of baking, which means you will be able to prepare your usual and favorite recipes. Consider that if you add amaranth flour to the dough, use a little more water than you are used to. This is because amaranth flour absorbs more liquid than ordinary flour;
Prepare gluten free pastries. Such recipes, again, will require more water, since you will need to make an airy bread structure. Starch can help. If baking does not necessarily have an airy structure, simply completely replace the usual flour with amaranth flour. This will make the dish gluten free;
Add amaranth seeds to pastries for texture and flavor. Lightly fry the grains in a dry frying pan before using, or simply add raw to the pastry or bread. Roasted seeds are great for making biscuits, as they add a dish of taste and crunch.

Amaranth Pizza

Ingredients:

  • egg – 4 pieces;
  • sour cream – 4 tablespoons;
  • mayonnaise – 4 tablespoons;
  • salt – ¼ tsp;
  • soda – ¼ tsp;
  • amaranth flour – 3 tablespoons;
  • mushrooms – 100 grams;
  • onion – 1 piece;
  • tomato – 1-2 pieces;
  • cheese – 100 grams.

Cooking:

Beat the eggs, add sour cream, mayonnaise, soda and salt to them. Mix everything well so that there are no lumps. Now slowly begin to pour the amaranth flour into the bowl, achieving a consistency similar to pancakes.

It’s time to prepare everything for the filling. To do this, rinse the mushrooms, cut them into small pieces and fry in a pan with onions. Slice tomatoes into thin slices so that it is convenient to stack them on pizza. Cheese grate on a coarse grater or also cut into thin slices.

Heat the pan and add a little vegetable oil. Next, pour the dough into it, put the filling on top. It remains to close the pizza lid and cook for 10-15 minutes on low heat.

Almost all children are crazy about pizza. And this, albeit somewhat unusual, will also please them and will become one of their favorite dishes.

Amaranth donuts

Ingredients:

  • cottage cheese – 200 grams;
  • egg – 2 pieces;
  • sugar – 2 tablespoons;
  • soda – 0.5 tsp;
  • starch – 1 tablespoon;
  • amaranth flour – 2 tablespoons;
  • rice flour – 2 tablespoons;
  • cinnamon or vanilla – to taste.

Cooking:

Squeeze the whey out of the curd, send it to the bowl and add the eggs, baking powder, sugar and vanilla (cinnamon). It is better to mix all this with a blender or to rub with a wooden spoon until a more or less homogeneous mass is formed. Make sure that there are no lumps in the dough!

Now gradually begin to add rice, amaranth flour and starch. The consistency of the dough should resemble the dough on the dumplings. Leave it under the film for about 30 minutes.

Next, you need to form bagels, if desired, sprinkle them with sesame seeds and send to the oven for 20-30 minutes at a temperature of 180 ° C.

Amaranth Cupcakes

Ingredients:

  • amaranth flour – 100-130 grams;
  • sugar – 150 grams;
  • butter – 80 grams;
  • egg – 4 pieces;
  • honey – 1 tsp;
  • soda – 1 tsp;
  • vanilla sugar – to taste.

Cooking:

First, separate the yolks from the proteins. First beat with ordinary and vanilla sugar. Now melt the soda and honey in a water bath. When the resulting mass starts to foam a little, remove it from the heat. We add honey, amaranth flour and melted butter to the whipped yolks.

Separately, you need to whip proteins and gently enter them into the formed mass. The consistency of the dough should turn out to be neither liquid nor thick.

Now grease the cake molds with vegetable oil and pour in the dough. Just keep in mind that pouring to the very edges is not worth it, since during baking the “cupcake mass” will increase significantly in volume. You need to bake the dish at a temperature of 200-220 ° C for 30-40 minutes.

In the dough, you can add nuts or raisins and decorate to your liking.

Amaranth Coconut Cookies

Ingredients:

  • egg – 2 pieces;
  • sugar – 2 tablespoons of a hill;
  • coconut flakes – 50 grams;
  • amaranth flour – 3 tablespoons;
  • vanilla – to taste.

Cooking:

Beat eggs with sugar until their mass increases 3 times. Now add coconut chips and flour to them. Mix thoroughly but gently until a homogeneous mass is formed. It is best to do this with a wooden spatula.

Put the parchment on the pan and lightly grease it with vegetable oil. Separate small pieces from the dough and spread them across the tray. It is necessary to bake such unusual cookies only 25-30 minutes at a temperature of 180⁰ С.

Amaranth cookies

Ingredients:

  • yolk – 2 pieces;
  • sugar – 2 tablespoons;
  • sour cream – 2 tablespoons;
  • butter – 1 tablespoon;
  • starch (corn is best) – 2 tablespoons;
  • amaranth flour – 2 tablespoons;
  • baking powder – 1 tsp;
  • vanilla – to taste.

Cooking:

Mix in a homogeneous mass of sugar, sour cream, butter, yolks, vanillin and baking powder. Mix the starch and amaranth flour separately. Combine them with a creamy sugar mass. Mix everything thoroughly before making the dough.

Pinch off small pieces of it and lay them on a baking sheet lined with parchment. It is necessary to bake such cookies only 30 minutes at a temperature of 180⁰ C.

Amaranth Halva

Ingredients:

  • seeds or nuts – 300 grams;
  • amaranth flour – 200 grams;
  • water – 100 ml;
  • vegetable oil – 3 tablespoons;
  • sugar – 100 grams;
  • vanillin – op the taste.

Cooking:

Heat the pan, pour a small amount of vegetable oil into it, and fry the seeds (nuts) on it. Now grind them to the consistency of flour. Fry the amaranth flour in a dry frying pan.

Add sugar to the water and put on fire until boiling. As soon as it boils, remove from heat and add vanillin and vegetable oil to the resulting syrup. Mix everything thoroughly. Next, send to the resulting mass of seeds and fried flour. Thoroughly knead. It should make a very thick dough.

Now lay out the halva on parchment and send to the fridge to cool and harden.

Delicacy is completely done!
