AMARANTH: SUPERFOOD WITH INCREDIBLE PROPERTIES

Amaranth – ancient seeds that conquered many countries. Popularity is due to the beneficial properties of plant seeds, as well as vegetable oil.

What is amaranth and why should it be included in your diet
Amaranth (or the seeds of kiwić – as the plant is called in Peru), an ancient pseudo-cereal from South America. Its history begins more than 8000 years ago. In the ancient Aztecs, amaranth was one of the main sources of food. For some time, the seed remained forgotten – after the Spanish colonization of Latin America – however, today it is again gaining consumers.

Joel Feren, an accredited practicing nutritionist and member of the Australian Dietitians Association, says amaranth is a special seed: “Amaranth has a really impressive profile and should be considered as part of a healthy, balanced diet along with a number of other foods.”

Feren explains that the true appeal of amaranth is that it is a pseudo-grain: a seed that provides the nutritional benefits of grains such as wheat and rice. Therefore, amaranth is ideal for those who follow the paleo diet, which involves the rejection of cereals.

As a nutritionist notes, amaranth is an excellent source:

  • Fiber;
  • Vitamin A
  • folate;
  • thiamine;
  • and iron, zinc, calcium, copper, manganese and potassium.

Also, according to Joel Feren, amaranth oil is incredibly useful. It has a positive effect on heart health, reduces the risk of cardiovascular disease and hypertension. In addition, amaranth seeds are very rich in high-quality vegetable protein – it contains about 15 percent.

Another significant advantage is that amaranth also contains 10 amino acids essential for the health and full functioning of the body. This makes it a valuable source of nutrients for vegans and vegetarians.

Note! Amaranth does not contain gluten, it is recommended for people with celiac disease or gluten intolerance.

Amaranth in the diet
Amaranth more and more actively “breaks into” the kitchen in different countries of the world. Ukraine is no exception. Already today on the shelves you can buy:

  • cereals;
  • flakes;
  • butter;
  • amaranth flour.

Some enterprises began to bake amaranth bread.

Amaranth seeds have a pleasant nutty flavor. Porridge is easy to cook. However, including it in your diet is also quite simple. For example, just replace traditional rice and eat porridge for breakfast, add seeds to soup or other dishes.

Amaranth flour is also becoming popular. It does not contain gluten – a substance that is literally dangerous for some categories of people. Almost any pastry can be prepared from amaranth flour:

  • bread;
  • cakes
  • Cakes
  • buns;
  • and much more.

However, the amaranth fly does not fit on its own, if you use only it, without additives, the dough will crumble.

Amaranth flour research
In 2013, detailed studies of amaranth flour were carried out. It turned out that it is a valuable ingredient, nutritious and useful for making bread. As a result of studies, it was found that the addition of amaranth flour to the dough can significantly increase the content of:

  • squirrel;
  • lipids;
  • dietary fiber;
  • minerals in the finished product.

But you should strictly adhere to the cooking recipe, otherwise the bread may be too brittle, it will crumble a lot. For example, if a combination of wheat and amaranth flour is implied, then 100 grams of the first should account for no more than 20 grams of the second. Such proportions will preserve the quality of bread, but also increase its nutritional characteristics.

Amaranth oil
Amaranth oil deserves special attention. It is obtained by cold pressing. This is important because high temperatures lead to a decrease in the content of nutrients in the oil.

Today, Ukraine produces high-quality cold pressed amaranth oil. The Shvedov brothers developed a unique installation for squeezing oil. Their company oil is popular in many countries.

Amaranth oil is indicated for the prevention of various diseases, it helps even in the treatment of oncology. To prevent acute respiratory viral infections, influenza and other diseases, increase immunity, you need to take oil regularly – 1-2 teaspoons per day.

To strengthen health – not so much is needed. It is enough to change your diet and introduce into it healthy and nutritious foods, characterized by a high content of vitamins and minerals. That is exactly how amaranth is. Of course, this is not a medicine, but it is that natural product that will help you change yourself!
