AMARANTH WITH DIABETES AND HYPERTENSION: NUTRITIONAL, TASTY AND USEFUL DISHES

Naturally, not everyone will like to eat it in its pure form. In addition, if you combine the plant with other foods, you can get a really tasty and incredibly healthy dish.

Today we will share with you recipes developed by Mexican Fernanda Zimmerman, a nutritionist at the Institute of Nutrition and Health, who received a degree in nutrition and nutrition at the University of Leon.

Features of nutrition in diabetes and hypertension

Type 2 diabetes and hypertension are currently among the most common in Mexico. Prevention of these ailments will avoid unpleasant consequences. The best way to achieve this goal is a healthy lifestyle and proper nutrition, regular exercise.

How among the many foods to choose those that can prevent these diseases? One of those actively studied by Mexican nutritionists is amaranth.

The plant, which was highly appreciated by the Mayans, Incas and Aztecs, has a lot of positive characteristics. And provides a positive effect on human health. In particular, this is achieved thanks to the unique composition of amaranth:

  • it has the highest content of highest quality vegetable protein (from 13 to 18%), and therefore it has the highest nutritional value;
  • Lysine is also present in the plant – an essential amino acid that is not produced by our body, but is very important for its health. In particular, lysine guarantees the full physical development of children, significantly reduces the risk of infection and strengthens the immune system. That is why it is so important to consume foods that contain lysine.

In addition, it was found that amaranth proteins help lower blood pressure and act as antioxidants.

Note! Some studies show that the protein contained in amaranth has a hypoglycemic effect.

It was also found that the plant is an excellent prophylactic against the formation of cancerous tumors. And research is underway on its use in the treatment of existing cancer diseases.

How to use amaranth in your diet
There are several ways to use amaranth when cooking:

  • grains can be added to yogurt;
  • flour – in the dough when cooking bread and pastries;
  • leaves – in salads.

You can also make various juices from amaranth, add it to fruit cocktails, sauces, stews, etc.

Mexican nutritionist Fernanda Zimmerman has developed several recipes that will help in the prevention of type 2 diabetes and hypertension, and should also be included in the diet of people who already suffer from these ailments.

Amaranth cream pate
The following ingredients are necessary to prepare the dish (the proportions are given in four portions):

  • 250 grams of amaranth leaves;
  • ½ cup finely chopped onion;
  • 150 ml of chicken broth;
  • 500 ml of skimmed milk;
  • 2 teaspoons of low-fat margarine;
  • salt to taste

Cooking process:

Amaranth leaves are boiled in a small amount of water, and when cooled down, beat in chicken broth. And set aside.
Margarine is melted in a frying pan and onions are fried in it until golden brown.
Milk is added to the fried onions, slowly and constantly stirring.
Then the leaves are poured in chicken broth.
All this is slightly stewed.
Salt is added to taste.
Note! The author of the recipe indicates that the cooked dish is served still hot with tortilla cut into strips. This is a national Mexican dish, which is a thin flatbread made from wheat or corn flour. You can replace it with more usual lavash for our country.

Amaranth soup
The following ingredients are necessary to prepare the dish (the proportions are given in four portions):

  • 1 cup amaranth;
  • 1 liter chicken broth;
  • 5 tomatoes;
  • ½ cup chopped onion;
  • 1 clove garlic;
  • 2 teaspoons of olive oil;
  • salt and pepper to taste.

Cooking process:

  • Prepare tomato sauce from tomatoes, onions and garlic, mix everything well to get a homogeneous mass, and put it in the refrigerator;
  • heat the olive oil in a saucepan over medium heat, add tomato sauce, bring it to a boil and pour in chicken broth;
  • season with salt and pepper;
  • when the broth begins to boil, add amaranth and boil for another five minutes;
  • serve hot with slices of fresh cheese.

To dine, one portion of this soup is enough – it is very nutritious!
