Amaranth has the potential to lower cholesterol
There are quite a few studies that have studied the effect of amaranth consumption on cholesterol levels, but few studies have considered the benefits of amaranth, which reduce cholesterol levels directly in humans.

Most of the studies involved animals, including rabbits, rats and hamsters, who received amaranth in their daily diet. In addition, in these small studies only a few species of amaranth were considered, mainly A. cruentus and A. hypochondriacus, which are a couple of the most common amaranth species included in food.

In these studies, various forms of amaranth were also used, most often amaranth seeds and oils obtained from the plant.

Animal studies have shown that the introduction of amaranth seeds in their daily diet reduced the level of low-density lipoprotein by 10-50%, and the total cholesterol level was reduced to 50%.

This class of lipoproteins is one of the main carriers of cholesterol in the blood. According to research, it was found that triglycerides were only slightly reduced, with the largest drop observed at 17%. On the other hand, in animal studies it has not been established that the level of HDL content, apparently, was not significantly increased.

In human studies, amaranth oil was used. It has been found that up to 18 ml of amaranth oil within three weeks reduces the level of LDL cholesterol by as much as 25%, and the total level of cholesterol decreases by about 20%.

Triglycerides were also reduced by 36%. In these studies, people followed a healthy diet, and one study showed that adding amaranth to this healthy diet did not show any additional benefit that lowers cholesterol. As with animal studies, amaranth did not significantly affect HDL levels.

How exactly amaranth lowers cholesterol?
Although the way in which amaranth lowers cholesterol is completely unknown, many suggestions have been made.

Although more research is needed to further study the ability of amaranth to lower cholesterol levels, this healthy grain remains incredibly beneficial for the human body.

So, it is not established how much amaranth should be included in the daily diet in order to achieve positive results. However, studies conducted in humans have shown that in the daily diet, the presence of 18 ml of amaranth oil is necessary – this is a tablespoon of oil.

However, due to its nutritional properties, other forms of amaranth, including grain and flour, can also be included in any “hearty” diet.
