4th Peruvian Amaranth Recipes

Spicy Amaranth
To prepare you will need the following ingredients:

  • french bread;
  • 2 cups of skimmed milk;
  • 300 g amaranth
  • 4 tablespoons of vegetable oil;
  • 1 onion;
  • 1 teaspoon minced garlic;
  • fourth of a cup of ground yellow pepper;
  • 2 teaspoons ground red pepper;
  • 1 teaspoon dried oregano;
  • 100 g of ground peanuts;
  • salt to taste

Cooking process. Crumble bread in boiled milk. Leave it to swell. Pour one liter of clean water into the pan, bring it to a boil and add amaranth, wait until the water reaches the boil and cook it all for about 35 minutes, until the water boils out completely.

In a saucepan, heat the vegetable oil, throw the onion, garlic, pepper, oregano into it. All thoroughly stew a few minutes, constantly stirring.

After that add amaranth and bread, peanuts and salt swollen in milk. Again, boil everything for a few minutes, stirring constantly. Usually, seven to eight minutes are sufficient for complete cooking.

Amaranth “pies” with tuna sauce
For these kind of “pies” you will need the following ingredients:

  • about 250 grams of roasted amaranth;
  • 1 tuna;
  • 3 eggs;
  • ½ cup vegetable oil;
  • salt to taste

To prepare the sauce, you will need the following ingredients;

  • 500 g of tomato paste;
  • 100 grams of green pepper;
  • 1 clove of garlic;
  • 1 onion.

Cooking process. Stir toasted amaranth, chopped tuna, eggs and salt. Form from this mass peculiar patties. Fry them well on both sides.

Now proceed to the preparation of the sauce. Mix all the ingredients and simmer them over low heat. After that, take a few boiled potatoes (depending on your appetite), fill them with sauces and boil again for five minutes.

Serve your patties along with these peculiar sauces.

Amaranth balls with cheese
To prepare you will need the following ingredients: amaranth balls

  • 150 grams of roasted amaranth;
  • 4 fish fillets;
  • ½ cup chopped boiled broccoli;
  • 3 eggs (you need to pre-beat slightly;);
  • 150 grams of cheese;
  • ½ cup of milk;
  • salt to taste

Cooking process. In a bowl, mix the amaranth, fish fillets, broccoli, eggs and salt. Form small balls and bake them in the oven for about 15 minutes at a temperature of 200 degrees.

Heat the milk in a separate saucepan, add shabby cheese to it and cook, stirring constantly, until the cheese melts.

Pour milk over cheese and balls and serve them on the table.

Amaranth “pies” with cheese
To prepare you will need the following ingredients:

  • 2 cups amaranth;
  • 1 cup grated cheese;
  • 1 sprig of parsley, chopped;
  • 1 medium onion;
  • 2 eggs;
  • salt and pepper to taste.

Cooking process. Stir all the ingredients thoroughly until a homogeneous mass is obtained. Form small portions from this mixture, stew in a saucepan with a little oil. Serve with green leaves of fresh lettuce.


The recipes are not really complicated and will not take much time to prepare them. But you will get delicious dishes that will delight you with its unique taste and nutritional value.
