We will not deny that taking care of our health is often caused by the aggravation of a particular problem. It is also true that many of us strive to prevent the emergence of health problems, and do this, as a rule, with the help of plants with healing properties. Such trends are currently observed in Azerbaijan, located on the border of Europe and Asia, with its own traditions of national cuisine and features of the institution of marriage. The experience of solving the problems that Azerbaijani physicians have noticed may be useful to residents of other regions.
FEATURES THAT MAKES US TO THINK
The geographical location of Azerbaijan is interesting because there are 9 out of 11 existing climatic zones, as well as a large number of sunny days. At the same time, in summer time, the air temperature reaches the mark of + 45 ° C, and the amount of precipitation in the foothills of the Caucasus can be 200 mm per year. Such conditions in some areas suggest the cultivation of drought tolerant crops, and here more and more attention is paid to amaranth with its high nutritional and energy properties, which are not lost in a hot climate with a precipitation deficit.
Guests of Azerbaijan, tourists are also amazed at the diversity and abundance of national cuisine, in which there are many fatty and spicy dishes. The Azerbaijani cuisine has at least 2 thousand self-sufficient dishes, and among them there are more than 30 first courses, and the usual (not festive) feast can last more than a day. However, with all due respect for tradition, doctors are increasingly advised to observe moderation in food, since excessive fascination with fatty and spicy food leads to disruptions in the body’s work.
Another feature of Azerbaijan is the tradition of marriage between relatives, and even now, according to Professor Elkhan Rasulov, the frequency of blood marriages in Azerbaijan is 18-19%. With this, many doctors associate an increase in the incidence of genetic blood diseases: more than 200 children with thalassemia are born every year. Moreover, the statistics of this disease in Azerbaijan shows steady growth. So, if in 2005 the number of registered patients with thalassemia who were diagnosed with this for the first time was 302 people, in 2015, for example, their number was 530 people. In addition, such a rare pathology as Brugad syndrome is found in Azerbaijan, and, according to Isa Mustafayev, head of the therapy department of the Azerbaijan State Institute of Postgraduate Medical Education named after Aziz Aliyev, without timely measures, it often leads to cardiac arrest and sudden death. Other diseases have also become more commonly recorded, and, according to the State Statistics Committee, the largest number of them are associated with the respiratory system, nervous system, digestion, and infectious and eye diseases have become frequent, indicating a decrease in immunity.
In connection with the increased risk of developing diseases, Azerbaijan’s doctors began to focus the attention of their patients on the need for prevention, and in order to prevent possible manifestations of allergy (Brugada syndrome, for example, may worsen when taking certain drugs), give preference to medicinal products. Preference is increasingly given to amaranth, as a rich source of nutrients that help to cope with almost all diseases.
THE MEDICAL ROLE OF AMARANTH
Scientists call amaranth a natural factory of useful substances, and believe that in competition with other cultures it takes all prizes in most indicators. At the same time, amaranth is distinguished by a high yield (up to 30-50 centners of grain per hectare), as well as a high content (16-18%) of high-quality protein, close to the ideal ratio of amino acids, without which people and domestic animals cannot live. To provide a basis for the full development of man, as well as animals and birds, new Ukrainian varieties have been zoned and studied in the territory of Azerbaijan: Kharkiv, Ultra, Lera, Sem, and Bagryanaya.
Great attention is paid to amaranth oil, which has high nutritional and energy, healing properties. So, in comparison with other vegetable oils, the oil from amaranth grain contains a greater amount of squalene, and this organic compound is currently used in the treatment of oncological diseases, radionuclide intoxication and AIDS patients. Squalene in the composition of amaranth oil has unique wound-healing properties, it easily copes with most skin diseases, including eczema, psoriasis and trophic ulcers, burns. Inside the human body, squalene activates the regenerative processes of the tissues of internal organs.
The vitamin composition of greens and amaranth grain is diverse. It is known that vitamins are essential for normal human and animal life, but they are not synthesized in sufficient quantities in the body. Consumption of amaranth, products from it makes it possible to fill the deficit of many vitamins, and with them – significantly improve health, reduce the manifestations of diseases and even get rid of them.
Vitamin C, is involved in redox processes, has a positive effect on the central nervous system, increases the resistance of the human body in extreme conditions, and in amaranth it is 80% more than, for example, than carrots.
At full strength, vitamin B is provided in amaranth. According to the vitamin B1 content, amaranth exceeds the grain of wheat and beans, and there is twice as much thiamine amaranth as in liver and meat, 6 times more than in eggs, 2 times more than in butter .
Vitamin B2 in amaranth contains almost as much as thiamine. Riboflavin is involved in the synthesis of redox enzymes that provide energy for the body to grow. By the content of vitamin B2, amaranth is almost equivalent to wheat germ, 19 times more than carrots.
Amaranth contains vitamin B5 (nicotinic acid) more than wheat bran, 65 times more than white bread, 19 times more than black bread, twice as much as beer yeast. A lack of vitamin B5 in the body leads to damage to the central and peripheral nervous systems.
Vitamin B6 (pyridoxine), as you know, is essential for protein metabolism. In amaranth it is almost as much as in beer and bakery yeast, more than in the liver, 5 times more than in wheat, 18 times more than in butter, 30 times more than in milk.
As part of amaranth, other equally important substances for the human body are present, such as serotonin, pigments of the red series, for example, xanthines, bile acids, choline, steroids. Beta-β carotene, which provides the body with resistance to a number of diseases, is worthy of attention, including:
• cancer (especially swollen lungs, stomach and breast);
• cardiovascular and degenerative diseases;
It has also been established that beta-carotene increases the blood levels of HDL cholesterol, which performs protective functions.
The unique chemical composition of amaranth has determined the infinity of its use as a therapeutic agent.
