Amaranth has a particular nutty flavor that attracts many. Due to its organoleptic properties, amaranth seeds can be used in the preparation of any dishes. We will not talk about the benefits! This is a topic for a separate article, especially since such materials have already been published on our website.
Preliminary preparation of seeds amarantracept from amaranth
To make dishes tastier and healthier, it is important to properly prepare the seeds. But this applies only to seeds. If you use other products, such as flour, butter or seedlings, they do not need such preparation.
Place them in a strainer and rinse thoroughly under running water. Then put in a pan, add 1 to 3 glasses of unsalted water to 1 cup of amaranth.
Bring to a boil, then leave to swell over low heat for about 30 minutes, after turning off the stove, cover with a lid and let it stand for another 10 minutes.
The recipe for this salad for fitness
The recipe lists the ingredients for two servings of salad. You will need:
- 150 grams of arugula;
- 120 grams of cherry tomatoes;
- 50 grams of mushrooms (champignons can);
- 50 grams of amaranth seedlings;
- 2 tablespoons of good olive oil;
- 2 tablespoons warm vegetable broth;
- half a teaspoon of mustard;
- 1 onion;
- some green onions;
- 1 pinch of iodized salt;
- sugar, pepper (to taste).
Note! Amaranth sprouts contain an especially large amount of nutrients that are important for the body’s activities, including those with medicinal properties.
Wash the lettuce leaves, wipe dry and cut into small pieces, wash the cherry tomatoes, dry and cut in half. cooking amaranth Clean the mushrooms and cut into small slices.
Gently wash the amaranth seedlings under running water and shake well. Mix with the remaining vegetables.
For salad dressing, beat olive oil with mustard and stir. Cut the onion (onion and green), add to the sauce, add sugar and pepper to taste, mix with the salad.
For this dish you will need the following ingredients:
- 150 grams of amaranth seeds;
- 200 grams of leek;
- 50 grams of butter;

- 1/2 bunch parsley;
- 1 tsp grated lemon zest;
- salt, pepper to taste.
Prepare amaranth as indicated at the beginning of the article. Cut the leek into small pieces and fry in butter and olive oil. Add vegetable broth and cooked amaranth.
Peel the carrots, chop them, chop the parsley and chop the walnuts. Add the carrots to the amaranth mixture and cook for ten minutes. Then add lemon zest, pepper and salt to enhance the organoleptic properties of the dish.
But here’s a recipe for a kind of dessert. To make it, you need the following ingredients:
- 500 grams of whole wheat flour;
- 200 g of amaranth flour;
- 2 teaspoons baking powder;
- 200 grams of butter;
- 4 egg yolks;
- 100 grams of honey;
- a couple of baking soda;
- a little rum (to taste).
Mix wheat and amaranth flour. Add baking soda, mix. Put 2 yolks, cut into small pieces of butter.
Stir and knead until smooth. Divide it into small pieces and let it soak for 10-15 minutes. Fold the pieces so that their thickness is about 0.5 cm – this is the blank of cookies. Put them on a greased butter pan. Brush them with the remaining yolks and bake in the oven, preheating it to 180 degrees. 15 minutes is enough for baking! Or until golden brown.
For making bread you will need:
- 100 grams of amaranth (can be pre-prepared as described above or coarsely ground);
- 350 ml of water;
- 150 grams of amaranth flour;
- 350 grams of the usual sifted flour;
- 300 ml of milk;
- 1 bag of yeast (42 g);
- 1 tablespoon honey;
- 1 teaspoon sea salt;
- 2 tablespoons of vegetable oil.
Soak the amaranth grains in water and boil them for 20 minutes over low heat, then leave to swell for 10 minutes. Mix amaranth with flour in a bowl.
Heat the milk, mix half with the yeast and honey and pour the mixture into a bowl. Cover the dough and leave it in a warm place for 20 minutes.
Then knead this dough with the rest of the ingredients, such as milk, salt and butter, and let it stand for half an hour. Bake the bread in a preheated oven with a small bowl of water at 200 ° C for 55 minutes.
Amaranth Cheese Meatballs on Endive Salad
Endive salad is also called salad chicory. This is a vegetable that is very similar to the usual salad.
To prepare this dish you need to take:
- 125 grams of amaranth;
- 350 ml of vegetable broth;
- 1 chicken egg;
- 2 to 3 tablespoons of whole-grain bread crumbs (gluten-free, for example, come from millet);
- black pepper;
- 1 stalk of smooth parsley, chopped;
- 2 tablespoons chopped hazelnuts;
- 3 to 4 tablespoons of coarsely grated cheese;
- uncured coconut oil for frying;
- 1 endive salad;
- 1 pear;
- 1 tablespoon balsamic vinegar;
- 2 tablespoons of red wine vinegar;
- 1 teaspoon mustard;
- 1 teaspoon of pear juice concentrate;
- pepper, salt to taste;
- 4 tablespoons of cold pressed peanut oil.
Note! We agree that this is a somewhat complicated recipe because of its unusual ingredients. However, we can not share it – it is very interesting! Perhaps someone will show the wonders of perseverance and be able to assemble the necessary components. Or make their own changes to the recipe.
Soak the amaranth in a warm vegetable broth and let it boil for 30 minutes over low heat. Then mix the amaranth with the egg, 1-2 tablespoons of breadcrumbs, dry yeast, pepper, parsley, hazelnuts and cheese. Amaranth dishes for the whole family
Form the resulting mixture of eight meatballs. Sprinkle with the remaining breadcrumbs and fry in hot coconut oil.
Wash fresh salad and pears. Slice the salad and pears into thin strips. Mix vinegar, mustard, pear juice concentrate, salt, pepper and oil with salad dressing. Serve with cooked meatballs.

Amaranth with cheese
Another unusual recipe that allows you to cook a delicious dish. For it, you need the following ingredients:
- 250 grams of amaranth grains;
- 600 ml vegetable broth;
- 2 small onions;
- 2 carrots;
- 2 cloves of garlic;
- 6 tablespoons grated hard cheese;
- 1 bunch of chopped parsley;
- 40 grams of butter;
- salt and pepper to taste.
Add amaranth grains to boiling vegetable broth. Let it boil and swell for about 30 minutes.
Peel the onions and carrots, cut into small cubes and add to the grain in the broth. Crush the garlic and also add to the pan, boil a little – the vegetables should be firm.
Stir in half of the cheese and chopped parsley, season and sprinkle in warm plates. Sprinkle with the rest of the cheese and place some butter on top.

Amaranth has been studied for a relatively long time as an alternative to traditional food. It is noted that he is able to solve the problem of hunger in the future.
However, there are some problems – the same German researchers note that not all varieties of amaranth grain ripen at the same time. Therefore, in this case, you have to collect the seeds manually. Although researchers in Europe are making efforts to ensure amaranth seed to ripen at the same time, this will allow combines to be used for harvesting.
