To prepare it you will need the following ingredients:

  • 1/2 liter chicken broth or beef;
  • 1/2 liter of milk;
  • 200 g amaranth leaves;
  • 1 onion;
  • 2 tablespoons of amaranth flour;
  • 1 red tomato;
  • 2 cloves of garlic;
  • salt to taste;
  • vegetable oil.

Prepare amaranth leaves – boil them for 7-10 minutes. Put a little vegetable oil in the pan and fry the onion until it turns golden. Remove the onion and fry the amaranth flour in the same oil. Add a little milk, stirring constantly to avoid lumps. Then add the broth and let it boil. Crush amaranth leaves and add them to the mixture. Grind the tomato, cloves, garlic and onion, pour it in on the cream soup. Season with salt to taste.

Note! This cream soup is rich in proteins, it has a low calorie level. If desired, can eat it with pretzels or croutons.

Aztec soup. Joy!
Want to know what the true Aztecs ate? Here is a recipe for their soup. Of course, it is not known for sure whether it is authentic, but, nevertheless, it is very tasty and nutritious.

To make it, you will need the following ingredients:

  • 12 amaranth pellets;
  • 1 onion
  • 1.5 liters of chicken broth (or beef);
  • 2 cloves of garlic;
  • 50 grams of grated cheese;
  • 2 red tomatoes;
  • 2 tablespoons of amaranth flour;
  • 2 chipotle (mexican red smoked pepper);
  • 1 can of concentrated (condensed) milk;
  • 1 sprig of epazote (Mexican tea, but you can take another fragrant herb);
  • 1 avocado;
  • slightly roasted bacon with sandpaper (or greaves) – at will;
  • salt to taste

The amaranth tortillas are cut into thin strips and roasted until they become slightly brown.

Chopped tomatoes with onions and garlic cloves, fry them very well and add amaranth flour. Mix thoroughly, so that no lumps form, gradually adding broth. Let boil, and then add a sprig of epazote (or other fragrant herbs), milk, chipotl pods (or just hot peppers) and some cheese. Let this whole mixture boil again and remove from heat.

Chicken in amaranth sauce. Real jam!
For cooking you will need:

  • 6 pieces of chicken;
  • 2 tablespoons of amaranth flour;
  • 1 onion;
  • 3 red medium tomatoes;
  • 2 cloves of garlic;
  • 3 carrots, cut into pieces;
  • 2 tablespoons butter or margarine;
  • 1 ketchup trickle (yes, the Mexicans wrote in their recipe – it is the trickle! Does it sound funny?);
  • salt and pepper to taste.

Chicken pieces are cooked in a liter of water with salt and a sprig of parsley.

Melt the butter or margarine in a saucepan. When it is hot, add amaranth flour, constantly stirring it and bringing to brown. After the flour has the desired color, add tomatoes, onions and garlic (pre-chopped). Let the mixture thicken a little, add carrot slices, a little salt and pepper to taste and a stream of ketchup.

After that, in the resulting sauce, add the pieces of the finished chicken, let it boil for a few more minutes and remove from the heat.

Note! If you wish, you can add some olives and peas to the sauce. But in any case, you get an incredible pleasure from chicken in amaranth sauce!

Picadillo empanadas. Delicious
If you look at pictures of Picadillo empanadas, you might get the impression that this is a Mexican variety of Ukrainian dumplings. In principle, this is about it!


  • 1 cup wheat flour;
  • 1 cup of amaranth flour;
  • 1 teaspoon sugar;
  • 2 teaspoons margarine or butter;
  • 150 grams of vegetable fat;
  • 500 grams of minced meat;
  • milk;
  • salt to taste.

Cook the minced meat. Mix flour with sugar and salt to taste, add margarine and butter. Knead until the dough is smooth, add a little cold milk and keep kneading until it is soft. Add some more milk if necessary.

Roll out the dough to make it quite thin. Cut circles from dough. They are filled with minced meat and folded, forming a kind of dumplings. “Dumplings” are placed in a greased, lacquered with egg or milk baking pans and placed in a preheated oven at 200 ° C. Baked for about 20 minutes.

Note. Picadillo empanadas can also be filled with chicken, turkey, tuna, sardine stews, you can add cheese to them. In any case, they are delicious and very nutritious.

Banana leaves stuffed with amaranth and meat. Joy!
You will need:

  • 1.5 kg of corn dough;
  • 300 g of amaranth flour;
  • 1 tablespoon baking powder;
  • 3 tablespoons of chicken or beef broth;
  • 3 cloves of garlic;
  • 700 grams of fat;
  • 3 medium chillies;
  • 2 cleaning chipotle;
  • 1 chicken breast;
  • 1 teaspoon cumin;
  • 30 squares of banana leaves;
  • salt to taste

Note! Oh, this recipe to cook in our conditions will be the most difficult. After all, to get squares of banana leaves is almost unreal. But who knows – suddenly compatriots who have moved to Mexico are reading us.

Whip butter, mix it with corn dough, amaranth flour, salt, amaranth flour, salt, baking powder and cumin. Ingredients need to be added gradually.

Grind peppers and garlic cloves in a blender and add them to the dough. Banana leaves are dipped in hot water to lightly sprinkle on them. Then take out, shake off the water, and impose a spoonful of dough and a little chicken breast (previously cooked).

The leaves fold, slightly squeezing them, forming a square. Then fold into a pan or pressure cooker, pour water and cook for about an hour and a half.

Note! You can replace the chicken stuffing with pork ribs or chopped pork.

Chipotle Meatballs. Pure protein!
You need the following ingredients:

  • 0.5 kg of beef or chicken;
  • 8 tablespoons of amaranth flour;
  • 2 cloves of garlic;
  • 1/4 onion;
  • 3 red tomatoes;
  • 1 jar of pickled chili peppers;
  • 1 handful rice;
  • 4 eggs;
  • a little vinegar;
  • a bit of ketchup;
  • salt to taste

Mix ground meat with garlic and onions, ketchup, vinegar, eight tablespoons of amaranth flour, pickled peppers juice, egg, a handful of rice and salt. Everything must be thoroughly mixed. From the mixture obtained, you need to form balls of the desired size and fry.

Wash the tomatoes, make a tomato and pour it into a saucepan, throw in the meatballs, a little more juice of pickled peppers and one egg. Add two cups of water and two teaspoons of chicken broth.

The remaining three eggs are cooked, then cut into small cubes and add cooked meatballs to the broth.

Amaranth pancakes. Delicious
You need the following components:

  • 250 g of amaranth cereals;
  • 2 chicken eggs;
  • salt to taste;
  • butter.

Beat eggs with salt, add amaranth flour, mix well, form pancakes and fry in hot oil until golden brown on both sides. They are served with red tomato soup.

Note! If desired, pancakes can be served with a salad of amaranth leaves. This dish is rich in proteins.

Flakes of wheat and amaranth flour. A great addition for all dishes.
You need the following ingredients:

  • 200 g of amaranth flour;
  • 800 g of wheat flour;
  • 175 grams of vegetable oil;
  • salt to taste;
  • hot water.

Amaranth flour and wheat is mixed, salt is added, then oil is added. Everything is very well mixed until a homogeneous mass. Water must be poured gradually. Cakes are formed from dough and cooked in heated vegetable oil.

Note! According to its nutritional value, 7 flat cakes are equal to 100 g of meat.

Dulce de Leche. Nutritious dessert
Dulce de Leche is a dessert dish of Spanish, Portuguese and Latin American cuisine, also used as a sauce, spreading and filling for confectionery.

To prepare it, you need ingredients such as:

  • 4 cups amaranth seed;
  • 6 cups of sugar;
  • 2 cups of powdered milk;
  • 6 pieces of cinnamon
  • 8 carnations
  • 0.5 teaspoon vanilla essence

Amaranth seed is prepared in 10 cups of water along with cinnamon and cloves. As soon as amaranth seeds are slightly swollen, add four cups of water and sugar. Stir constantly.

After half an hour, add powdered milk diluted in two cups of water. Continue stirring so that it does not stick to the walls. Vanilla is added at the very end.
