Amaranth porridge with kiwi and bee pollen
The following is a recipe for amaranth cereal, designed by Christine Nussgrub – she calls it “my favorite cereal recipe.”
For the preparation of porridge you will need the following ingredients (taken on the basis of two portions):
- 2 cups boiling water;
- 1 cup amaranth seed;
- ½ tsp ground cinnamon;
- 1 tablespoon of natural coconut oil (or a spoon of organic oil);
- ½ tablespoon of maple syrup;
- a pinch of sea salt (added at the end of cooking porridge);
- 1 medium sized kiwi;
- 1 teaspoon of bee pollen (for garnish).
So, all the ingredients are prepared, now you can start cooking. Soak the amaranth in water overnight.
Tip! If you forget to soak it, you can simply pour boiling water over the grain in the morning and let it brew for 10 minutes before putting it on fire and boiling it.
Add coconut oil, salt and cinnamon while cooking seeds. Add maple syrup to taste at the very end, when the grain was cooked. Bee pollen
Tip! If you see at some stage of preparation that the seeds are not ready, add a little water and boil them a little more.
Serve porridge with kiwi slices and bee pollen.
By the way, you can buy bee pollen in health food stores. It is an excellent nutritional supplement with unsurpassed antioxidant properties. However, if you are allergic to bee products, then pollen is contraindicated for you.
