Amaranth, as an important element of anti-cancer nutrition
Amaranth can and should be the main anti-cancer product in the kitchen of people who are concerned about their health.

Amaranth is a beige-brown tiny, grain the size of poppy seeds. He has healing properties. In addition, it was actively used in its culture (and cuisine), the ancient Incas and Aztecs.

Squalene is most often found in the liver of a deep-sea shark, available only in the form of an additive, rather expensive at the same time. However, amaranth provides an economical and affordable alternative.

In addition, amaranth is characterized by a high content of essential minerals that are important for the health of the human body. These are trace elements such as:

  • calcium;
  • magnesium;
  • iron;
  • zinc;
  • phosphorus

Therefore, amaranth will be useful when the body does not have enough minerals or lose them as a result of, for example, the treatment of diseases.

Tiny seeds are an excellent source of vegetable protein. One cup of amaranth will provide the body with more than half the average daily dose of protein.

Therefore, plant seeds are an excellent means to fight cancer cells and help prevent weight loss caused by oncology treatment and chemotherapy.

How can amaranth be used?
Kirstin Nussgrub recommends using amaranth seeds as follows:

  • for cooking warm cereals, for example, instead of oatmeal;
  • add to salads;
  • add to stews or soups as a kind of thickener.

Flour obtained from seeds is excellent for making gluten-free baking:

  • cookies;
  • cupcakes;
  • pancakes, etc.

Amaranth porridge with kiwi and bee pollen
The following is a recipe for amaranth cereal, designed by Christine Nussgrub – she calls it “my favorite cereal recipe.”

For the preparation of porridge you will need the following ingredients (taken on the basis of two portions):

  • 2 cups boiling water;
  • 1 cup amaranth seed;
  • ½ tsp ground cinnamon;
  • 1 tablespoon of natural coconut oil (or a spoon of organic oil);
  • ½ tablespoon of maple syrup;
  • a pinch of sea salt (added at the end of cooking porridge);
  • 1 medium sized kiwi;
  • 1 teaspoon of bee pollen (for garnish).

So, all the ingredients are prepared, now you can start cooking. Soak the amaranth in water overnight.

Tip! If you forget to soak it, you can simply pour boiling water over the grain in the morning and let it brew for 10 minutes before putting it on fire and boiling it.

Add coconut oil, salt and cinnamon while cooking seeds. Add maple syrup to taste at the very end, when the grain was cooked. Bee pollen

Tip! If you see at some stage of preparation that the seeds are not ready, add a little water and boil them a little more.

Serve porridge with kiwi slices and bee pollen.

By the way, you can buy bee pollen in health food stores. It is an excellent nutritional supplement with unsurpassed antioxidant properties. However, if you are allergic to bee products, then pollen is contraindicated for you.
