Such a reaction, according to the scientist, is very important, because often unknown proteins are the ancestors of cancer cells. But in addition to protecting against infections, from cancer, the immune system cleanses the body of dying, old and already unnecessary cells. Therefore, the role of the immune system is priceless.

Just as the immune system takes care of the healthy functioning of the whole organism, so a person must take care of the reliable state of the system itself. To do this, you can regularly ensure the supply of substances that contribute to its strengthening, and many of these substances are contained in amaranth. In addition, the name of the plant indicates the possibility of giving life (amaranth translates as denying death), and a rich composition can be considered a kind of confirmation.

Vitamin C, which is abundant in amaranth, helps protect against influenza, SARS, acute respiratory infections, and other seasonal diseases.
In order for the whole immune system to function normally, it must fully receive proteins, vitamins (especially A, C, E and group B) and minerals present in the amaranth.
Yellow and red plant foods (tricolor amaranth, panicled amaranth, vegetable amaranth, lifeguard, valentine, orange giant) contains beta-carotene, which is converted into vitamin A in the body.
The essential amino acid lysine, which is contained in amaranth, is not inferior to an identical substance of animal origin, and by its action reduces anxiety by blocking stress receptors, which positively affects the immune system. In addition, lysine helps to reduce infection in the body.
Vitamin C and flavonoids are considered natural biostimulants of the immune system. The last component is also interesting because it does not disappear during heat treatment.
You can separately dwell on the value of flavonoids. They are close to hormones in structure and chemical composition, and, like hormones, are involved in almost all processes in our body. Flavonoids, in particular, regulate the action of various enzymes, including digestive ones, and one of the enzymes, the kinase, which is responsible for the reproduction of cells, they suppress. It is the latter that makes this substance an excellent antitumor agent. It was also established that flavonoids are excellent antioxidants: in this role they are 50-100 times more effective than vitamins C and E, reliably protecting us from diseases and aging.

Especially flavonoids are needed when observed:

  • fatigue and weakness;
  • frequent stress;
  • trauma, especially with bleeding;
  • increased fragility of capillaries;
  • blood pressure problems;
  • circulatory disturbance;
  • inflammatory diseases of the stomach and intestines;
  • change of seasons, especially from heat to cold.

Given this and the rich composition of amaranth, immunity can be strengthened by organizing a healthy diet for yourself and including products in it, where this plant is one of the ingredients.

What can be included in the menu
To strengthen the immune system, a wide variety of amaranth-based foods can be included in the diet. It should be borne in mind that amaranth oil is better for dressing various dishes, especially salads. During heat treatment, it loses a very important organic compound squalene. All other products are quite suitable for preparing any dishes.

Cheese bread with amaranth flour

This bread is suitable for celiac disease, for everyone who is allergic to gluten. His recipe can be found in the recommendations on healthy eating in the section “Therapeutic food”.

Ingredients
• cassava flour – 125 g;
• amaranth flour – 50 gr;
• grated cheese – 150 gr;
• high-quality oil – 20 gr;
• chicken eggs – 2 pcs;
• baking powder – 2 tablespoons.

On a note. Cassava or bread root is a tropical plant whose starchy tubers are considered an important food product in some African, Asian and South American countries. It helps in the prevention of diabetes and heart disease. It is believed that the plant can act as an emollient, enveloping and anti-inflammatory agent. According to scientists, cassava also has anti-inflammatory, antioxidant properties.

Cooking
In a bowl, mix the cassava, grated cheese, amaranth flour, ghee, baking powder and two egg yolks. Mix everything until smooth. Then, to the resulting mixture, add two egg whites, whipped into a strong foam, and continue to mix. In a greased pudding mold, firmly press the dough to the bottom and sides. It is necessary to bake at an average temperature for ½ hour, until the surface becomes golden brown. After cooling, the bread is removed from the mold.

Amaranth broth noodle soup

Ingredients
• 1 cup of amaranth flour;
• 1 clove of garlic;
• 1 ½ liter bean broth;
• 1 cup grated white cheese;
• 1 pack of thin noodles;
• 1 medium tomato;
• salt to taste;
• 1 slice of onion.

Cooking
It is necessary to expand the noodles without breaking it, and fry in oil until golden brown. Then chop the tomato, onion and garlic in a blender, add salt and pour into the fried noodles.

In pre-cooked bean broth, dissolve amaranth flour and add it to the soup.

Bring the whole mixture to a boil. When the noodles are soft, turn off the soup. Serve the soup, seasoned with grated cheese.

Amaranth Salad

Ingredients
• 1 ½ cup of water;
• 1/2 cup amaranth;
• 1 cucumber;
• 1 stick of celery;
• 1/2 onion;
• 1/4 tsp mint;
• 1/4 cup coriander;
• 1/4 cup nuts;
• 2 tsp olive oil;
• 1 tsp lemon peel;
• 1/4 tsp of salt;
• 1/4 tsp pepper;
• 1/2 cup peas;
• 1 cup feta cheese.

Cooking
Bring the water to a boil, then add amaranth to it, reduce the heat and cover the pan with a lid. Continue to cook for 20 minutes. During this time, amaranth should completely absorb the liquid.

Then you need to peel and chop the cucumber into medium pieces and do the same with a celery stick. Cut the onion into rings, finely chop the mint and coriander. Mix all the ingredients in a deep bowl, add nuts and pre-cooked peas.

When the amaranth is ready, drain the water, rinse it with cold water, remove all the liquid with a spatula or spoon. Cooked amaranth add to the mixture of vegetables and nuts. We mix everything and season with lemon peel, olive oil, salt, pepper. After that, add finely chopped or crumbled feta cheese.

Such a salad can be served with a small amount of lemon juice or some slices of lemon to give the salad a fresher flavor.
