• chicken eggs – 3 pcs;
• sugar, better than cane – 160 g;
• amaranth grain −130 g;
• coconut flakes (flour) – 230 g.


In a hot oven, heat coconut flakes for 5 minutes.

Cooking “popcorn” from amaranth. To do this, pour no more than 1 tablespoon of amaranth into a heated, heat-resistant container with high walls (with a larger amount of grains they can burn), cover with a lid and fry until the grains open. No need to pour oil into the dishes. To better “explode” the grains, they should be shaken when frying the grains (without removing it from the heat). Pour the finished portion into the dish and cook the next.

Then you need to beat the eggs with sugar into a strong foam. Add coconut flakes, popcorn from amaranth and mix everything.

We cover the baking sheet with baking paper and use a small spoon to spread the dough on it with balls. Cookies are baked in the oven at 180 ° for about 15 minutes.

Chocolate amaranth flour cookies with brown sugar

The recipe is based on 5 servings. All ingredients must be at room temperature.


• butter – 8 tablespoons;
• brown sugar – 5 tablespoons;
• sugar – 4 tablespoons;
• vanilla extract – 1 tsp;
• eggs – 1 pc;
• rice flour – 1.25 cups;
• amaranth flour – 0.65 cups or 5.9 tablespoons;
• tapioca (starchy groats, which are obtained from the roots of the sweet cassava plant) – (0.3 cups);
• sea salt – 0.5 tsp;
• baking soda – 0.25 h l;
• chocolate – 1 cup.


Mix the butter, both types of sugar and vanilla extract, add the egg and mix everything again until smooth.

In a separate bowl, mix rice flour with amaranth, add tapioca starch, salt, soda and mix.

The dry mixture is sent to liquid, mix. Beat the resulting mixture well to get a mass of homogeneous consistency.

Put chocolate drops or chips in the dough and stir. Then put the resulting dough onto baking paper and form “sausages” from it. Wrap the dough with baking paper and put it in the refrigerator for 1 hour. When it hardens, the “sausages” must be cut into circles 1 cm thick, and spread them on a baking sheet covered with baking paper at a distance from each other. Now you can put the pan in a preheated oven to 180 degrees. Cookies are baked in 10-12 minutes (the edges of the cookies should be browned).

Ready cookies should still stand 5 minutes on a baking sheet, after which it can be removed and served with tea. When cooling, cookies become more solid and crumbly.

Amaranth Energy Oatmeal Cookies

The recipe is based on 4 servings.


• chicken egg -1 pc;
• oatmeal – 150 g;
• amaranth flour – 50 g;
• ground cinnamon – 1 tsp;
• vanilla – 10 g;
• raisins – 50 g;
• milk – 50 ml.


We mix oatmeal, flour, spices, add milk and let stand for 15 minutes to make the flakes swell. Then add the egg, raisins and mix well. Put the resulting mixture into molds and send to the oven. You can also put the mass on a baking sheet, but then you have to form the cookie when it is baked.

Bake cookies at a temperature of 180-190 degrees and for 20 minutes.
