Amaranth is becoming popular all over the world. Residents of many countries appreciated its special organoleptic qualities and unsurpassed therapeutic and prophylactic properties. Even pastries made from amaranth, has excellent dietary characteristics.

Amaranth pies
Incredibly useful and uniquely tasty are the patties made from amaranth.

Note. It is noteworthy that you can modify this recipe as you wish – depending on your taste preferences and the availability of certain products.

To prepare you will need the following ingredients:

  • 125 grams of amaranth grain;
  • 375 ml of vegetable broth;
  • about 75 wheat flour;
  • 2-3 tablespoons of oatmeal;
  • 1 chicken egg;
  • 1 teaspoon of dried herbs and seasonings in your home;
  • 1 tablespoon mustard, medium sharpness;
  • salt and pepper to taste;
  • vegetable oil for frying pies;
  • to choose and taste: cheese and chopped nuts.

The sequence of actions in the preparation of the following. Carefully wash amaranth, then cook vegetable broth, strain it and boil amaranth grains in broth.

Note. Also, a good option for preparing amaranth grains is their pre-soaking for several hours.

Put the cooked amaranth in a bowl and add all other ingredients, mix well and wait until everything is cool. So, you have the dough ready. Now you need to prepare the filling.

She can be any vegetable. We offer the following option:

  • 2 medium sized bulbs;
  • 2 cloves of garlic;
  • 100-150 grams of carrots;
  • 1 piece of ginger the size of a walnut;
  • 1 tablespoon of olive oil;
  • 10 grams of butter;
  • 1 pinch of allspice;
  • parsley (about 2 tablespoons of chopped greens);
  • salt and pepper to taste.

Vegetables are pre-steamed, and then cut into small cubes. When cooking vegetables, be sure to add butter and vegetable oil, additionally seasoned with spices.

All ingredients are thoroughly mixed, then one chicken is added to the same place and again everything is thoroughly mixed.

Take the dough, form a large pie with a filling, put in a large frying pan and fry in butter until golden brown. The finished cake should be served with fresh vegetable salads and any sauces that you like.

Note! Again – you can independently add or modify the recipe of cooking. For example, replace carrots with other vegetables or add them additionally.

Amaranth Casserole
If you prefer to dine without meat or want to diversify your diet, at least temporarily excluding meat dishes from it, amaranth casserole is best suited for these purposes.

Note! This recipe should also be considered as basic. That is, you can independently modify or supplement it with any vegetables and even fruits!

To prepare you will need the following ingredients:

  • 125-150 grams of amaranth grains;
  • 350 ml (or more) vegetable broth;
  • Two medium bulbs;
  • 1 clove garlic;
  • 450 grams of zucchini, paprika, eggplants, etc. – what the soul wants;
  • 150 grams of carrots;
  • 300 grams of tomatoes;
  • salt, pepper and other seasonings to taste;
  • olive oil;
  • 50-100 g of cheese for baking.

Prepare amaranth seeds in vegetable broth. Cut the zucchini, cormorants into cubes of approximately 1.5 centimeters and fry in olive oil, season with salt, pepper and paprika powder. When finished cooking, pour in a plate and set aside.

Next, you need to finely chop the onion, garlic, carrots and make a sauté. Fresh tomatoes are also chopped and added to vegetables, season with spices and simmer for 5-10 minutes over medium heat.

Add the zucchini, mix well, and then pour everything into a separate saucepan. Add cooked amaranth. Place the pan in the oven and bake for about 20 minutes at a temperature of 200 degrees. Approximately 10 minutes before the end of cooking, tuck it with grated cheese.

This casserole is ideal for a hearty and hearty lunch. The dish is combined with fresh salads.

Sweet Amaranth Baking
For sweet amaranth baking, the same rules apply as for baking bread: that is, amaranth flour must be mixed with wheat flour, rye, to ensure the presence of gluten and astringent substances.

Amaranth Flour Pancakes

The amaranth pancake recipe involves the use of the following ingredients:

  • 60 g of amaranth flour;
  • 100 grams of wheat flour;
  • 1/2 tsp salts;
  • 1/2 teaspoon baking powder;
  • 235 ml of buttermilk (low-fat cream) at room temperature;
  • 120 ml of whole milk at room temperature;
  • 1 chicken egg (beat well);
  • 3 tablespoons unsalted butter, melted and slightly cooled;
  • 2 tablespoons of honey;
  • cooking oil for frying.

Note. These ingredients are enough to make 12 pancakes with a diameter of up to 10 centimeters.

Mix dry ingredients in a separate bowl. Whip buttermilk, whole milk, egg and melted butter separately in another bowl, then add to the flour mixture and mix well. Give the dough a “rest” for 10 minutes.

Heat a laminated pan with water until hot and lightly grease with butter. Now add the dough, fry it a little, until bubbles appear on the surface (about 1-2 minutes per side). Amaranth baking

Pancakes should not be too dark, not too pale. If necessary, adjust the temperature (intensity of the fire) to make the color evenly golden brown.

Serve pancakes is recommended warm with honey or syrup, jam. You can also add fresh berries if the season allows – strawberries, raspberries, blackberries or pomegranate seeds.

Amaranth Flour Pancakes
To make amaranth pancakes you need the following ingredients:

  • 150 grams of flour of your choice – wheat, rye or any other;
  • 50 grams of amaranth flour;
  • 3 chicken eggs;
  • 1 pinch of salt;
  • 1-2 tablespoons of vanilla sugar;
  • 250 ml of milk;
  • 250 ml of mineral water;
  • maple syrup – to serve (can be replaced with honey, jam, etc.);
  • vegetable or butter for frying pancakes.

All ingredients are thoroughly mixed, water is gradually poured, until you get a good dough. Pancakes are fried on both sides until golden brown appears on each side. Serve with honey, jam or maple syrup.
