VITAMIN MENU WITH GREEN AMARANTH

The level of immunity depends on the amount of vitamins that the body receives. Providing the body with essential vitamins can be adjusted through nutrition, the introduction of healthy foods into the diet. Amaranth green is taken as one of the components of such dishes, and this gives the body a lot of vitamins and other substances necessary for the body.

What are the rich leaves amaranth
The amaranth leaves contain about 10 vitamins, among which a significant part is accounted for by representatives of group B. The green part of amaranth is also rich in vitamins A, C, E, K. Of these, A, E and K are fat soluble, and C, B1, B2, B3 (PP), B5, B6 and B9 are water soluble.

As you know, fat-soluble vitamins can last for a long time in the body, accumulate in fatty tissues and the liver, and, as necessary, provide the body with support. If we talk about water-soluble vitamins, it should be noted that under the influence of heat, they become less effective, and sometimes – break up. Therefore, amaranth greens will be most useful if the leaves are not heat treated during the cooking process.

Health effects of amaranth leaves
 

Due to the presence of vitamins and other nutrients, which in amaranth more than in other cultures, this plant is recognized as the best in its nutritional and energy properties. However, they are not destroyed even during long-term storage. Introduction to the diet of foods amaranth and herbs in particular has a positive effect on health.

As a result of consumption of amaranth occurs:

In cooking, amaranth leaves are used in America, China, Southeast Asia. The plant is used in the food industry for the production of chips, waffles, various biscuits and even baby food. Amaranth is also used as a dye – to give the drinks a dark color and a special aroma. Fresh leaves are used to add to salads, hot dishes. Shoots can be blanched, steamed. The plant is popular in Asian cuisine: it is added to salads or served as a side dish. In Greek cuisine, amaranth shoots are seasoned with vegetable oil with the addition of lemon juice and served with fish dishes.

Japanese compare the nutritional value of amaranth greens with squid meat. It is used as an ingredient in salads and soups, served with any salad vegetables, meat, fish, often used instead of spinach. The leaves can be added to cold soups like okroshka, as well as dried and added to the tea collection with melissa and oregano.

Simple Vitamin Salad

Ingredients

  • 200 g amaranth leaves;
  • 200 g nettle leaves;
  • 50 g of garlic leaves (can be replaced with leaves of young winter garlic).

Cooking
Ingredients pour boiling water, chop, salt, fill with vegetable oil or sour cream.

To prepare one serving you will need:

  • 50-55 g of amaranth greens;
  • 1 egg;
  •  2-3 tablespoons grated carrots;
  •  1 medium sized apple;
  • 1 onion;
  • 1 cucumber.

Crumble hard-boiled eggs, fresh or pickled cucumbers, apples, raw or cooked carrots, onions. Then add fresh (or pickled) amaranth leaves (they should make up one third of the total weight of the salad). This salad is better to fill with sour cream.

Amaranth Leaf Soup

First, you need to prepare 500 ml of meat or chicken broth with boiled potatoes, add 400 grams of amaranth leaves and 100 g of sorrel leaves (pre-pour boiling water over the leaves) and cook everything for 10 minutes, and remove from heat. Then beat two 2 raw eggs and pour them into the broth, stirring constantly. When serving, add sour cream to taste in the soup.

Amaranth Sauce

In a small saucepan, bring 200 g of cream to the boil, send them finely chopped amaranth young leaves, grated soft cheese (100 g), ground black pepper (5 g), herbs and spices to taste. The resulting mixture again put on a small fire, and, stirring, cook until the cheese melts.

Amaranth leaf tea
Fresh and dried amaranth leaves are suitable for making tea. Brew them as usual tea, and leave to infuse. You can add mint, cinnamon, a slice of lemon. When tea leaves cool to 40 degrees, you can add honey. Tea turns out very tasty, with an unusual aroma.
