Labor week has passed – and good! Ended safely – and great! And that means it’s time to treat yourself to sweets and goodies! After all, you need to properly relax and rest, so that the week ends exactly on a positive note.
Today, I suggest you cook a very unusual dish – a kind of chocolate pudding with amaranth, cardamom and a piece of pear.
Note! This recipe will be especially appreciated by vegetarians!
Of course, you don’t have to cook pudding today. You can do this on another day. But for some reason it seems that it will be a particular pleasure on Friday night!

Chocolate for the recipe is the best to choose black. If you absolutely do not want it or do not like it at all, you can take a milk one, but then I don’t answer for the final result! Amaranth pudding
Amaranth in this dish goes well with chocolate due to its pleasant nutty aftertaste and special texture. It can even be called a little cream.
Here pears are used at the very end, before serving sweets – cut into slices and put in a cup. You can safely eat pudding without a pear. But with her – this is an additional pleasure. Pears should be quite hard, harsh.
Note! Buy pears even in spring is not a problem. They are freely sold in supermarkets and markets. And quite at an affordable price!
Cardamom in this recipe perfectly complements the pleasant aroma of the remaining ingredients, as well as enhances their taste.
Already prepared pudding can be served, both warm and cold. It all depends on personal preference. However, the first and second options are very interesting. And each of them allows you to open the dish in a new way.
Ingredients
To make this great chocolate pudding, you need the following ingredients:
- 120 grams of amaranth;
- 480 grams of milk;
- 100 grams of dark chocolate;
- some salt;
- 4 pears;
- 5 cardamom pods;
- 1 stick of cinnamon;
- some vanilla;
- two large spoons of sugar;
- liter of clean water.
Sequence of Cooking Amaranth Pudding with Pear
Take amaranth, rinse it thoroughly and place it in a small pot. Pour the milk, bring to a boil. Then you need to cook it over low heat for about 35 minutes. Stir lightly from time to time. As soon as the milk has almost evaporated (by the end of the time required for cooking), remove from the heat and leave for 5 minutes.
Finely chop or rub the chocolate and pour into the amaranth, stir until melted, add a pinch of salt. Place in a serving dish (or in several small bowl).
Now proceed to the preparation of pears. Peel the pears, cut in half, place in a small saucepan. Fill with water, add cardamom, cinnamon, vanilla and sugar. Bring to a boil and simmer for about 25 minutes or until the pears are soft (for just gently “poke” them with a knife).
Before serving pudding (warm or cold), put one pear in the dish! You can rub some more chocolate on top, but already through a larger grater!
