The easiest way to use amaranth is to make salads. A few leaves of a plant with green onions and dill need to be slightly salted and seasoned with olive oil. Delicious meat salad with amaranth – it is enough to boil lean meat by mixing it with amaranth leaves, sliced boiled egg, onion and dill. Original scrambled eggs are obtained by adding amaranth leaves, cheese or cheese. The plant can be brewed as tea (using fresh or dried leaves) – the drink will get a very pleasant sweetish astringent taste.

Amaranth Seed Meatballs
For the preparation we need:
- 300 grams of minced meat;
- 250 g of roasted amaranth seeds (whole amaranth flour is suitable as an alternative);
- bow;
- 2 eggs;

The carrots are grated, the onion is finely chopped and the resulting mass is lightly browned. Stuffing is mixed with roasting and amaranth seeds. From this, meatballs are formed that need to be stewed with a non-spicy tomato or tomato-sour cream sauce.
Recipe for apples with amaranth
It will take: 10 sliced apples without peel, 1 tbsp. l honey, 1 tsp. Cinnamon, ¼ cup of amaranth flour, half a glass of water and half a glass of tapioca.
Apples are stewed in a small amount of water. When all the moisture evaporates, it is necessary to cool the resulting mass slightly by adding honey, cinnamon, flour and tapioc. The massed mass is laid out in a baking dish, which is pre-lubricated. Sprinkle with amaranth flakes on top. Bake at 220 degrees for 18-25 minutes.
Amaranth Green Pie Recipe
To prepare the dough, you will need: 2 cups of flour, half a cup of milk, half a cup of vegetable oil, salt and 30 grams of margarine.
For the filling: 250 grams of fresh leaves or 75 grams of dried amaranth, salt and pepper, as well as 2 small onions.
To make the dough, you need to mix all the ingredients and form a pastry mold, then leave for 20 minutes. Without stirring, the resulting mass must be put back into the baking dish. Oven for about 30 minutes at an average temperature.
The filling is prepared separately – to do this, mix the onion and the amaranth, previously stewed on a slow fire. If dried leaves are used, they should first be soaked in cold water for an hour to get a “fresh” look. Some cases will require boiling the leaves for 20 minutes. After that, the cake is stuffed with stuffing and baked again for 20 minutes at an average temperature. Served cold or warm.
Amaranth chops
For cooking you need: amaranth leaves, ½ cup of milk, 1 cup of white flour, 75 grams of grated cheese, 2 eggs, 1 tablespoon of vegetable oil.
Amaranth must be thoroughly rinsed, drained and, putting in the heated oil, warm up until complete evaporation of water. The batter is made from flour, cheese and milk. The finished mass should stand for one hour, after which it can be combined with amaranth. The dough is taken with a spoon and fried like pancakes.
Amaranth Leek Soup
As ingredients are used:
- leaves or fried amaranth seeds, or a decoction of the leaves;
- leek;
- olive oil;
- spring onions;
- nutmeg;
- salt and pepper.
Amaranth leaves are simmered for 15 minutes in vegetable broth with leek. After that, the resulting mass is fried in amaranth oil, added to boiling soup and cooked for several minutes. When ready, add spices and chopped greens.
Amaranth with vegetables
Main ingredients: amaranth seeds, olive oil, celery, carrots, parsley, potatoes, pepper. Salts, peppers and thyme can be used as seasonings.
Seeds boil for about 15 minutes. Vegetables are fried in olive oil, poured with water and simmering over low heat. After that, boiled seeds are added and cooked over low heat with the addition of spices, and then boiled for about 10 more minutes.
Dessert with amaranth and nuts
Ingredients: honey or corn syrup, margarine or butter, chopped walnuts (peanuts), amaranth seeds.
Honey (syrup), butter (margarine) must be heated, mixed by adding nuts or amaranth seeds. The resulting mass is thoroughly mixed, after which it is poured in a thin layer into baking molds. After cooling, it is cut into small pieces.
